Banana Cookie Bars

I made these bars a few weeks ago and they were really yummy, They aren’t really a summer square and would be good to make for a cookie tray at Christmas or in the fall. I halved the recipe and made it in an 8″x8″ pan and it turned out well. Have you ever noticed but even when you don’t LOVE a square recipe some how they always get eaten up……………

Banana Cookie Bars

1 1/2 c. flour
1/3 c. unsweetened cocoa powder
1/8 tsp. salt
1 c. butter, room temp.
3/4 c. icing sugar
1 can (14 oz.) sweetened condensed milk
3 bananas, mashed
2 c. milk chocolate chips
1 c. pecans
2/3 c. shredded coconut

1. Preheat oven to 350 degrees. Line or grease a 9″ × 13″ inch pan.
2. In a bowl, combine the flour, cocoa powder, and salt. Set aside. In another bowl, beat butter and icing sugar till creamy. Beat the butter mixture with the flour mixture until combined.
3. Press into pan & bake 15 min.
4. In a bowl, mix condensed milk & bananas until incorporated. Once the crust has baked for 15 minutes, take out and pour the banana mixture over it. Combine chocolate chips, nuts & coconut & sprinkle over top.
5. Bake about 25-30 min. Cool completely. Chill in the fridge for 1 hour. Once chilled cut up. I stored these in the fridge.
