Sticky BBQ sauce

Do you love BBQ or what! I have a killer recipe for homemade BBQ sauce that is from “Tylers Ultimate” by Tyler Florence. I have made this sauce several times and we have had it with chicken, ribs, and  wings. It’s sticky, sweet and damn delicious. The recipe calls for peach preserves but I always use apricot as I have a serious dislike for all things peach. I have also made it with strawberry which was excellent as wll but I still prefer the apricot.

BBQ Sauce

  • 2 slices bacon
  • 1 bunch of fresh thyme
  • Extra-virgin olive oil
  • 1/2 onion, peeled
  • 2 garlic cloves, peeled
  • 2 c. ketchup
  • 1 c. peach preserves (I prefer apricot) 
  • 1/4 c. brown sugar
  • 1/4 cup molassas
  • 2 tbsp. red wine vinegar
  • 1 tbsp. dry mustard
  • 1 tsp. ground cumin
  • 1 teaspoon ground paprika
  • Freshly ground black pepper

Wrap 2 bacon slices around 1 bunch of fresh thyme and tie off with kitchen twine to make a nice bundle. Pour 2 tablespoons of olive oil into a large saucepan over medium heat. Add the bacon and thyme bundle and cook for 3-4 minutes to render the bacon fat and give the sauce a nice smoky taste. Peel 1/2 onion and 2 garlic cloves, and add to pan. Cook for 5 minutes. Add 2 cups ketchup, 1 cup peach preserves, 1/4 cup brown sugar, 1/4 cup molasses, 2 tablespoons red wine vinegar, 1 tablespoon dry mustard, 1 teaspoon ground cumin, 1 teaspoon ground paprika, and some freshly ground black pepper to saucepan. Give the sauce a stir and turn the heat down to low. Cook for 15-20 minutes to meld the flavors.

Store in the fridge in a mason jar or tupperware container. (I pick out the bacon before I store it)
